Best of luck. While I've seen this stuff growing in other gardens aronud here, I have yet to make a single plant on Echinacea survive here for more than a season. Same here, I just usually cut it into slices (like you see Carrots in stew) and dry them this way, to plop into soups and stews. I imagine shredding/peeling them into "flakes" or strips would be REALLY fast to dry and just as convenient. Not sure about roasting or such myself. Good luck an...

Hmm, I'll leave actual Advice to others, but I have a vague idea that in smaller doses, a splash of nourishing herbal vinegars actually help with getting the minerals out of dark leafy greens. At least that was my understanding, so would hesitantly suggest small splashes to be Helpful to osteo-issue...
